Ingredients for the Vegan Tofu Stir Fry
- Extra-firm tofu
- 1 tablespoon vegetable oil
- 3 tablespoons soy sauce divided, plus additional to taste
- 3 garlic cloves minced
- 1 small bunch of green onions chopped
- 1 tablespoon fresh ginger
- 2 teaspoons sesame oil
- 1/4 teaspoon red pepper flakes
To make the Vegan Tofu Stir Fry
Cut the tofu into 3/4-inch cubes. In a large skillet or wok, heat the vegetable oil over medium-high heat and add the tofu. Add 1 tbsp soy sauce and sauté until the tofu is nicely colored on all sides, about 8-10 minutes. Add garlic, green onion, ginger, red pepper flakes, and remaining soy sauce. Stir and cook until fragrant, about 1 minute.
Add your favorite mix of fresh vegetables or fungi and cook until tender. Stir in sesame oil. Remove from the heat. Serve with brown rice, noodles, or quinoa, and top with freshly chopped green onion.
